Braised Beluga Lentils

Ingredients for 2 large portions:
1 tbsp olive oil
1 tbsp butter
1/2 cup diced onion
1/2 cup diced carrot
1/2 cup diced celery
6 springs fresh thyme
salt and pepper to taste
1 cup black lentils
1 3/4 – 2 cups chicken stock, more as needed
1 tbsp champagne vinegar, or to taste

2 tbsp chopped Italian parsley
