Beer-Braised Lamb Shanks

Ingredients for 2 Portions:

 

2 lamb shanks (ask butcher for the smaller fore shanks)

 

1 teaspoon salt, plus more as needed

 

freshly ground black pepper to taste

 

1 tablespoon olive oil

 

1 onion, chopped

 

1 large rib celery, cut in 1-inch pieces

 

2 large carrot, cut in 1-inch pieces

 

3 cloves finely chopped garlic

 

2 teaspoons tomato paste

 

12 ounces not-too-hoppy beer

 

2 springs rosemary
pinch cayenne

 

sliced green onions, optional
